- 1 Tbsp. curry powder

- 1/2 cup hot water
- 1/2 cup coconut milk
- 3 cups chicken stock
- 2 eggs, beaten
- 1/2 cup uncooked jasmine rice
- 1/2 cup fresh cilantro, chopped
- 1/2 cup scallions, chopped
- 1/2 cup sliced green onions
- 1/2 cup cashews, chopped
- 1/2 cup peanuts, chopped
- 1/2 cup raisins
- 1/2 cup dried mango, diced
- 1/2 cup fresh lime juice
Instruction
Step 1: Rice noodles: Soak rice noodles in warm water for 15 minutes. Drain and set aside.
Step 2: Vegetables: Cut green onions into 3 inch long pieces. Cut carrots into 3 inch long pieces. Cut celery into 3 inch long pieces. Cut cabbage into 3 inch long pieces. Cut radishes into 2 inch long pieces.
Step 3: Chicken: Cut chicken into 3 inch long pieces.
Step 4: Fresh Basil: Cut basil into 1/2 inch long pieces.
Step 5: Chilies: Cut green chilies into 3 inch long pieces.
Step 6: Curry Paste: In a blender, blend together the curry paste ingredients. Set aside.
Step 7: Coconut Milk: Blend coconut milk with the water until smooth.
Step 8: Fish Sauce: Blend fish sauce with the water until smooth.
Step 9: Garlic: Peel and mince garlic.
Step 10: Onion: Peel and mince onion.
Step 11: Ginger: Peel and mince ginger.
Step 12: Fresh Basil: Add basil to the curry paste mixture.
Step 13: Salt: Add salt to the curry paste mixture.
